Baking soda (sodium bicarbonate, NaHCO₃) is a chemical leavening agent used in baking, typically produced synthetically from salt and carbon dioxide. The difference between baking soda and baking powder is that the acid component is missing. When baking soda reacts with an acid, such as sour milk, yogurt, or lingonberries, carbon dioxide is released, causing the dough to rise.
Baking soda works best in recipes that include an acidic ingredient. It can be substituted with baking powder, with ½ teaspoon of baking soda equivalent to 1 teaspoon of baking powder. However, if baking soda is used in light-colored cakes, such as sponge cakes, there is a risk that the cake may become discolored. Baking soda is best used in darker cakes like gingerbread or carrot cake. It is an approved food additive in Sweden with the E-number E500.
