Black pepper comes from the Piper nigrum plant, a species in the Piperaceae family, which also produces white and green pepper. It is a perennial vine that can grow up to 10 meters long, featuring small white to green flowers and single-seed berries.
The pepper is harvested six to eight times per season, with pickings every two weeks. Black pepper is made by picking unripe green berries, which are then fermented and sun-dried, turning them dark brown to black.
It can be used whole or ground, and provides the best flavor when freshly ground in a pepper mill. Black pepper is one of the most widely used spices in European and international cuisine, complementing meat, poultry, fish, vegetables, and sauces.
