Vanilla, which belongs to the orchid family, is a climbing herb that can grow 10-15 meters long. Vanilla beans are the fruit capsules of this plant. The capsules can range from 10-25 cm long and 0.8-1.5 cm in diameter. Fresh vanilla beans have very little flavor. The flavor compounds are released through a process where the beans are dried and turn black, developing their characteristic vanilla taste. This entire process can take up to five months, making vanilla one of the most expensive spices.
To use a vanilla bean, a lengthwise slit is typically made to extract the small black seeds inside, where most of the flavor is concentrated. After making the slit, the bean can also be simmered in the dish you're preparing and removed before serving. Vanilla beans are commonly used in vanilla ice cream, crème brûlée, vanilla sauce, and other baked goods.
