Ascorbic acid, or vitamin C, is an organic acid and antioxidant. Since the human body cannot produce its own vitamin C, we must obtain it from our diet. Examples of foods high in vitamin C include potatoes, vegetables, citrus fruits, sour berries, peppers, rose hips, currants, and strawberries.
Ascorbic acid (E300) is used to prevent fruits and berries from turning brown during preservation. The recommended amount is ½ to 1 teaspoon (½ to 1 g) per kilogram of mashed fruit or per liter of syrup. Dissolve the ascorbic acid in a little of the cooled mash or syrup and then add the mixture to the mash or compote.
