It is easy to assume that cayenne pepper is a type of pepper, but it is actually a variety of chili. Cayenne pepper comes from the small, fiery fruits of a low-growing perennial shrub. Like paprika, chili, and other peppers, it belongs to the Capsicum genus.

The heat of chili peppers is measured in Scoville units, which indicate the amount of capsaicin—the chemical compound responsible for the spiciness. Mild chili varieties range between 100-500 Scoville units, medium-hot varieties range from 1,000-5,000, and extremely hot ones can reach up to 570,000 Scoville units. Cayenne pepper typically measures around 27,000 Scoville units.

Cayenne pepper adds heat to sauces, soups, dressings, seafood and fish stews, as well as meat stews.
