Despite its name, cayenne pepper is not a type of pepper but rather a variety of chili. It comes from the small, fiery fruits of a low-growing perennial shrub. Like paprika, chili, and other peppers, it belongs to the Capsicum genus.
The heat of chili peppers is measured in Scoville units, which indicate the amount of capsaicin, the chemical compound responsible for spiciness. Mild chili varieties range from 100–500 Scoville, medium-hot varieties from 1,000–5,000, and extremely hot chilies can reach up to 570,000 Scoville. Cayenne pepper has a heat level of approximately 27,000 Scoville.
Cayenne pepper adds heat to sauces, soups, dressings, seafood and fish stews, as well as meat stews.
