Turmeric is a perennial herb belonging to the ginger family. It grows between 60-100 cm tall, with large leaves and yellow flowers. The spice is derived from its bright yellow to orange rhizome. At the end of the growing season, when the leaves begin to wither, the plant is harvested. The fresh rhizome is boiled for two to three hours, then sun-dried for six to eight days, brushed, polished, and finally ground into a fine powder.
Turmeric is a key ingredient in curry. Its flavor is very mild, slightly bitter, and subtly aromatic. However, its most distinctive characteristic is its vibrant yellow color, earning it the nickname “the saffron of the East.” Despite this, turmeric shares no real similarities with saffron beyond its color.
Turmeric enhances and adds a beautiful golden hue to dishes such as light sauces, soups, rice, couscous, and various Asian recipes.
