Kockens Hjorthornssalt Påse - Ammonium Bicarbonate 50g
Ammonium bicarbonate, also known as hartshorn salt, is a chemical leavening agent, similar to baking soda and baking powder. Its chemical formula is (NH₄)₂CO₃. When hartshorn salt reacts with acid, carbonic acid is formed, which produces the leavening effect. Like baking soda, hartshorn salt works best when an acidic ingredient is included in the recipe.
The ammonia in hartshorn salt gives it a very pungent smell, which is why it is best used in flat and dry baked goods, such as drömmar (Swedish dream cookies) and mandelkubb (almond cookies). If used in other baked goods, the ammonia may not dissipate fully, leaving an unpleasant ammonia taste in the cake.
Hartshorn salt can be substituted with baking powder, doubling the amount of baking powder compared to the amount of hartshorn salt in the recipe. For example, 1 teaspoon of hartshorn salt = 2 teaspoons of baking powder.
