The true pepper, Piper nigrum, belongs to the diverse family Piperaceae. From this plant, we get black, white, and green pepper. It is a perennial climbing plant that can grow up to 10 meters long. The flowers are small, white to green, and the fruit is a single-seed drupe.
The peppercorns are harvested by hand in whole clusters, six to eight times per season, approximately every two weeks. Black pepper is made by picking the green, unripe fruits, which are then fermented and sun-dried, turning them dark brown to black.
Black pepper can be used whole or ground, with the best flavor achieved by grinding it fresh in a pepper mill. It is one of the most common spices in European cuisine, suitable for all types of cooking and as a table seasoning.
