Black pepper comes from the Piper nigrum plant, part of the Piperaceae family, which also produces white and green pepper. The plant is a perennial vine that can grow up to 10 meters long, with small white to green flowers and single-seed berries.
Harvesting occurs six to eight times per season, with pickings every two weeks. Black pepper is made from unripe green berries, which are fermented and sun-dried, turning them dark brown to black.
Black pepper is widely used in European and international cuisine, enhancing the flavor of meat, poultry, fish, vegetables, and sauces. For the best taste, grind it fresh in a pepper mill.
